After analyzing young Barley Grass leaves, the Resource Research Association (Office of Science and Technology) Japan, reported young barley leaves to be rich in vitamins (inluding beta-carotene, B-vitamins, and VItamin-C); minerals (including potassium, calcium, iron, phosphorus, and many live enzymes including the anti-oxidant enzyme, Superoxide Dismutase (SOD). Barley grass is also said to have 30 times more vitamin B1 and 11 times the amount of calcium than there is in cow's milk, 6.5 times as much carotene and nearly 5 times the iron content of spinach, close to seven times the vitamin C in oranges, four times the vitamin B1 in whole wheat flour, and 80 micrograms of vitamin B12 per 100 grams of dried barley plant juice.

Young Barley leaves contain trace minerals that are vital to health. These are used by the body to activate enzymes, sustain cellular activity, and absorb and utilize other minerals. Some of these such as boron, chromium, cobalt, copper, iodine, iron, manganese, nickel, selenium and zinc

Barley (Hordeum vulgare) grows in over one hundred countries in the world. It is a grain plant like wheat, cereal, corn and rice. Barley used to be the most important crop.
